Place caster sugar and water in a medium saucepan over low heat. Stir until sugar has dissolved. Throw in pearl barley, ginger and lemon peels and simmer for 30-40 minutes. Remove from heat, strain to remove lemon peels, pearl barley and ginger slices then transfer to a pitcher. Allow to cool for 10-15 minutes. When ready, add lemon juice (and more sugar if desired) and refrigerate for 15-20 minutes. Serve over ice.

What you need:
- 5 cups water
- 1 tbsp. honey
- 10-15 mint leaves
- 2 tsps. fresh lemon juice
- Small pinch of salt
Grind washed mint leaves with a little bit of water to create a paste. Combine the paste with water, stir well then strain the water into a pitcher. Add in the honey, lemon juice and salt into the pitcher and stir well. Chill in the refrigerator for 10-15 minutes then serve over ice.
Spiced Fruity Treat
What you need:
- 3 strawberries, sliced
- 1 cup diced ripe mango
- 2 tbsps. fresh lime juice
- 1 cup water
- 8-10 ice cubes
- A pinch of chipotle chili powder
Blend strawberries, mango, water and ice cubes briefly until smooth then transfer to a pitcher. Add lime juice and chili powder and stir well to combine. Serve immediately.

What you need:
- 1 cup unsweetened almond or coconut milk
- 1 tsp. organic coconut oil
- 1/2 tsp. turmeric powder
- 1/2 tsp. vanilla powder
- Maple syrup to taste
- A dash of nutmeg or cardamom
- 3-4 ice cubes
